Ingredients
6 cups shredded green cabbage (about 1 small head)
1 cup shredded carrots
Optional: 1/2 cup shredded red cabbage (for color)
Optional: 2 Tbsp finely minced onion
Dressing
1/2 cup mayonnaise
2 Tbsp apple cider vinegar (or white vinegar)
1 Tbsp sugar (adjust to taste)
1 tsp Dijon mustard (optional)
1/2 tsp celery seed (optional, classic coleslaw flavor)
1/2 tsp kosher salt
1/4 tsp black pepper
Instructions
In a large bowl, toss the cabbage and carrots (plus any optional add-ins).
In a small bowl, whisk together all dressing ingredients until smooth.
Pour dressing over the cabbage mixture and toss until evenly coated.
Cover and refrigerate at least 30 minutes (1–2 hours is better). Toss again before serving.
Tips: For extra crunch, dress it right before serving. Keeps 2–3 days refrigerated; it will soften slightly over time.
