Cornbread Fritters

Ingredients

  • 1 cup cornmeal

  • 1/2 cup all-purpose flour

  • 1 tbsp sugar (optional)

  • 2 tsp baking powder

  • 1/2 tsp salt

  • 1/4 tsp black pepper (optional)

  • 1 cup buttermilk (or milk)

  • 1 large egg

  • 2 tbsp melted butter (or oil)

  • Optional mix-ins: 1/2 cup corn kernels, chopped jalapeño, scallions, shredded cheddar

  • Frying oil (vegetable/canola), 1–2 inches deep

Instructions

  1. Heat oil in a heavy skillet to 350°F (175°C) (medium-high).

  2. Mix dry: cornmeal, flour, sugar, baking powder, salt (and pepper).

  3. Mix wet: buttermilk, egg, melted butter.

  4. Combine wet into dry just until no dry spots remain. Fold in any mix-ins. Batter should be thick; if it’s runny, add 1–2 tbsp flour/cornmeal.

  5. Fry: drop batter by tablespoonfuls into hot oil. Fry 2–3 minutes per side until deep golden.

  6. Drain on paper towels; sprinkle with a little salt.

Serving ideas: honey or hot honey, maple syrup, butter, sour cream + chives, or alongside chili.
