Ingredients
1 cup cornmeal
1/2 cup all-purpose flour
1 tbsp sugar (optional)
2 tsp baking powder
1/2 tsp salt
1/4 tsp black pepper (optional)
1 cup buttermilk (or milk)
1 large egg
2 tbsp melted butter (or oil)
Optional mix-ins: 1/2 cup corn kernels, chopped jalapeño, scallions, shredded cheddar
Frying oil (vegetable/canola), 1–2 inches deep
Instructions
Heat oil in a heavy skillet to 350°F (175°C) (medium-high).
Mix dry: cornmeal, flour, sugar, baking powder, salt (and pepper).
Mix wet: buttermilk, egg, melted butter.
Combine wet into dry just until no dry spots remain. Fold in any mix-ins. Batter should be thick; if it’s runny, add 1–2 tbsp flour/cornmeal.
Fry: drop batter by tablespoonfuls into hot oil. Fry 2–3 minutes per side until deep golden.
Drain on paper towels; sprinkle with a little salt.
Serving ideas: honey or hot honey, maple syrup, butter, sour cream + chives, or alongside chili.
