Cucumber & Tomato Salad

Ingredients

  • 2 medium cucumbers, sliced (or halved lengthwise and sliced)

  • 3–4 medium tomatoes, chopped (or 2 cups cherry tomatoes, halved)

  • 1/4 medium red onion, thinly sliced (optional)

  • 1 tbsp chopped dill or parsley (optional)

  • 1/3 cup crumbled feta (optional)

Dressing

  • 2–3 tbsp extra-virgin olive oil

  • 1–2 tbsp red wine vinegar (or lemon juice)

  • 1/2 tsp kosher salt, plus more to taste

  • 1/4 tsp black pepper

  • 1 small garlic clove, minced (optional)

Instructions

  1. Combine cucumbers, tomatoes, onion, and herbs (if using) in a large bowl.

  2. In a small bowl, whisk olive oil, vinegar (or lemon juice), salt, pepper, and garlic (if using).

  3. Pour dressing over the vegetables and toss to coat.

  4. Let sit 10 minutes (optional) for the flavors to meld.

  5. Top with feta (if using). Taste and adjust salt/acid, then serve.

Tip (less watery): Lightly salt the cucumbers and tomatoes, let sit 10 minutes, then drain before dressing.
